Our chum caviar is made from selected, fresh roe and exclusively refined with fine sea salt. Preservatives and pasteurization are deliberately avoided to preserve the authentic, pure taste. Why is your red caviar frozen?

Our red caviar is packaged in its purest and most natural formwithout preservatives, exclusively with a pinch of salt, and without pasteurization, which is common in many commercially available products.

Since we place particular emphasis on serving our customers caviar of the freshest quality, freezing is the best and gentlest method to preserve its delicacy, taste, and texture.

Without preservatives, caviar – like any fresh food – has a limited shelf life. Freezing allows us to optimally maintain its natural quality.

The result: noticeably tender caviar with a full, unadulterated taste.

Why is your red caviar not pasteurized?

Red caviar, in its natural form with low salt content, only lasts for a few days. To extend its shelf life, many manufacturers add preservatives or pasteurize the caviar. This involves heating it to about 60 °C.

However, this process alters the original taste and causes the egg membranes to become thicker and firmer – the result is caviar as it is often found in supermarkets: less tender, often firm in consistency, and with an altered aroma.

Freezing is the gentlest method to preserve freshness. This way, the authentic taste is retained, and the delicate texture of the caviar remains as it should be in its natural form.

Can I freeze black caviar too?

No, not at all!

Black caviar has a significantly thinner skin, which means its structure and shape are severely affected by freezing.

Black sturgeon caviar should always only be stored in the refrigerator at 0°C to +4°C.

Can red caviar be refrozen once it has been thawed?

We advise against this. As soon as the caviar is thawed, open the tin and enjoy it with full freshness.

Store it at 0°C to +4°C in the refrigerator.

After thawing, the red caviar should be consumed within 72 hours.
