What makes Beluga caviar so special?

Beluga Sturgeon (Huso-Huso) is the rarest and most exquisite of all caviar varieties. It is known for its large, glistening pearls. Its mild, creamy-buttery flavor combined with the delicate texture make it an incomparable delicacy.

Where does your Beluga caviar come from?

From the Caspian region: the original area of origin of caviar. Wild-caught Beluga caviar is now unobtainable and prohibited in trade due to strict regulations. This protects the sturgeon from extinction.

Our caviar is farmed in accordance with the Washington Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES). The sturgeons are raised in a responsible and natural environment without harming nature.

Why is Beluga caviar so expensive?

Beluga caviar is extremely rare because the Huso Huso sturgeon only produces caviar after about 15-25 years. In addition, there are strict regulations and the elaborate care necessary to ensure quality and sustainability.

Unlike many other breeders, the caviar is not obtained by the "milking" method. Milking involves removing the eggs from the living sturgeon's body through pressure massage and hormonal stimulation. Many breeders use this method to optimize profits, as a sturgeon can produce caviar multiple times this way.

How do I recognize high-quality Beluga caviar?

High-quality Beluga has large, shiny pearls with a uniform color (mostly silvery-gray to anthracite). Pearls with a diameter of up to 3.4mm! Very light caviar is considered particularly rare and noble.

The eggs should have a delicate shell and burst easily in the mouth. Mushy or overly soft consistency indicates inferior quality or poor storage.

Its taste is harmonious, without excessive saltiness or fishiness. Mild, buttery, and creamy.
